Anne's Lemon Ricotta Pancakes with Maple Blueberry Sauce

Ingredients:
Pancakes:
- 3/4 C flour
- 1 TBSP baking powder
- 1/2 tsp nutmeg
- 1/4 tsp salt
- 2 TBSP sugar
- 1 C ricotta cheese
- 2 eggs
- 2/3 C milk
- 1 lemon-zested & juiced
Maple Blueberry Syrup:
- 2 C fresh blueberries
- 1 C maple syrup
- 2 TBSP sugar
- 1 stick of cinnamon
- 1 strip of lemon peel
Directions:
Combine wet & dry ingredients separately. Whisk dry into wet. Let sit for 5 minutes and cook on hot griddle.
Meanwhile, simmer the ingredients for the maple blueberry syrup for 15 minutes and enjoy!
According to Anne, this dish is best enjoyed with some Ella Fitzgerald playing in the background.
