This is an easy and delicious meal my grandfather used to whip up for his family. My mom carried the tradition on into our home, and we kids loved it every time. Thanks to my mom for sharing this treat!
Long Boys
This recipe is a yummy marriage of meatloaf and hamburgers... it's meatloaf you can eat with your fingers! Grampy used to make a double recipe of Long Boys so we'd be able to eat the leftovers for lunches. They are great cold, like a delish meatloaf sandwich!
Ingredients
1 lb lean ground beef
1 tsp. salt
1/4 tsp. pepper
1/4 cup ketchup
1 Tbsp. Worcestershire sauce
1/4 cup finely chopped onion
1/2 cup corn flake crumbs (bread crumbs can be substituted)
1/2 cup evaporated milk
2 11-inch submarine rolls or 3 6-inch hoagie rolls
American cheese
Instructions:
Cut 2 11-inch submarine rolls (or 3 6-inch hoagie rolls) in half lengthwise. Put equal parts of meat mixture on the cut side of each half-roll and spread evenly to the edges.
Bake on a cookie sheet at 375 degrees for 20-25 min. (or until the beef is cooked the way you like it.) During the last 5 minutes of baking, top with small strips of American cheese.
